Preheat oven to 180°C.
Line baking tray with baking paper. Place the Apple & Cranberry Scotch Roast on the prepared tray. Bake for 1 hour for each kilo of product.
Always check to make sure pork is cooked through.

Prepare a cranberry and thyme flavoured sauce/gravy to serve with the pork by combining equal quantities of chicken stock and cranberry sauce. Simmer with a clove of garlic and a sprig of thyme. Reduce slightly and thicken with a little cornflour if desired. Accompany pork with some roasted hasselback potatoes and seasonal vegetables.
